Quince Chef Knife
I designed this knife with Chef Michael Tusk, inspired by his favorite knives in his personal collection. As Quince was remodeling, I took a tour of the new space to help inform the knife’s design.

Blade: 1095 and 15N20 Damascus steel
Handle: Manzanita with brass bolster and rivets

The blade shape and weight was inspired by the knives from Chef Tusk’s personal collection he showed me. The Damascus steel was made with a mentor of mine, Eric Clausen.
The handle was designed with the curves and circular windows of the restaurant in mind. I used the red Manzanita to compliment the red brick exterior and contrast with the oak interior of the space. The Manzanita was from a dead tree in Marin, near the farm that supplies Quince with their fresh vegetables.
It was such an honor to make this knife.
